Today, we will explore how to preserve the fruits and vegetables. By following a few easy steps, we can still eat them when they are out of season.
Freezing
Freezing is the simplest way to save fruits and vegetables. But it is important to freeze them after they have cooled down. To avoid freezer burns, which can affect the taste and feel, we should only use plastic bags or boxes designed for the freezer.

Canning

Pressure canning food requires a pressure canner. Its size should be based on the amount of food to be canned. The pressure canner should be filled with fruits and vegetables as tightly as possible. Good foods for pressure canning include carrots, corn and bell peppers.
Whichever method you use, you should keep the fruits and vegetables from fresh air.

There are many pickling methods. You can pickle whole vegetables or vegetables cut in small pieces by adding salt, pepper or other seasonings.

Japanese businessman Katsuo Inoue chose Italy for his summer vacation this year. He enjoyed the views of Florence and Rome-without ever leaving Japan.
Inoue and his wife “flew” to Italy on First Airlines, a company known for entertainment (娱乐),not transportation. The Tokyo-based new company entered the fast growing online tourism early this year as many countries have stopped accepting foreign tourists.

The “passengers” on First Airlines sit in the first — or business-class areas of an airplane model. Workers serve meals and drinks as large screens show passing clouds and other views outside the airplane. The country's biggest airline, ANA Holdings, said that the numbers of passengers flying to foreign countries fell by 96 percent since June when Japan has stopped most travel in and out of the country. The International Air Transport Association (lAIA ) and The International Tourism Association (ITA) said last month that international travels wouldn't be able to recover until 2024. But they said the online travels have been growing very fast.
The president, Hiroaki Abe, said, “Since we started our online tour this year, our business has been increasing by 50 percent each month. Most of our customers usually travel to other countries every year and they can now experience some of that here when they are unable to go to the real attractions.”

A group of scientists are hurrying to document and protect the ancient ruins along Puerto Rico's coasts. They are working as fast as they can before rising sea levels destroy a large part of the island's history.
The work started in August 2017. With the help of 3D imaging and other advanced technologies, the scientists have explored a large piece of land along Puerto Rico's north coast and identified an ancient ceremonial center used by the Taino Indians. About 2,000 years ago, the Tainoes lived on many islands in the Caribbean Sea. But after the arrival of Christopher Columbus and other Europeans, they were all killed.
Scientists also found a large living place just east of the site? which is seriously endangered by rising sea levels and other natural disasters. Puerto Rico's Department of Natural Resources has said the sea level around the island is rising by more than 3 mm every year.
However, climate change has more immediate effects. These include the destruction of the Puerto Rico coastline and natural habitats by storms.
Warmer temperatures in the Caribbean increase the number and strength of storms and Puerto Rico faces the possibility of storms every year for six months during the Atlantic hurricane season. Hurricane Maria had already washed away part of its history.
Scientists are now trying to find out how badly the hurricanes and loss of land have affected the heritage site they are studying. Eric Lo is an engineer who flew to Puerto Rico in August 2017 to start the project one month before Maria struck the island. Lo was surprised at what he saw when he returned months later.
“Pieces of land where I stood do not exist anymore. They are underwater,” he said.
